Reports To: Chief Operating Officer, Toptable

Location: Oceans & Carlotto, New York, NY

Oceans, a locally and globally inspired seafood restaurant, was founded by Vancouver’s award-winning Toptable Group with the philosophy of creating a timeless and approachable dining experience. Executive Chef Andy Kitko sets the vision for the menu inspired by the Pacific, Atlantic, and Mediterranean shores that features the freshest catches available – all accented by seasonal ingredients.

Carlotto Cucina Italiana is a modern urban trattoria honoring Italy’s most celebrated regions. Featuring pastas made daily, Carlotto is set in a modern intimate space designed by the award-winning Rockwell Group and is anchored by a stunning bar featuring a thoughtfully curated cocktail list along with one of New York’s largest lists of amaro and an Italian focused wine program. Carlotto is nestled in the heart of Union Square, adjacent to its sister restaurant, Oceans.  

JOB SUMMARY:

The Director, Operations for New York City’s Oceans Restaurant and Carlotto Cucina Italiana will be a dynamic self-starter who is a key player on the leadership team responsible for overseeing the execution of efficient restaurant operations, as well as maintaining high production, productivity, quality, and customer service standards. Leading by example, this hands-on management role provides a high level of event oversight, technical proficiency and operational/personnel support to ensure the smooth execution of day-to-day operations and scheduled events. 

ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Leads the delivery and execution of an unforgettable culinary experience for guests
  • Provides leadership, development and motivation to the team to ensure guest experience is always paramount through consistent delivery of high-quality food and beverages
  • Leads the team by example and through demonstrating care at all touch points
  • Builds a collaborative and positive team culture where all team members are passionate in caring for the customer and in creating a best-in-class premium customer experience
  • Oversees all day-to-day and event activity to ensure proper planning and execution
  • Identifies root causes of gaps in guest satisfaction and assists in the development of corrective and proactive action plans where appropriate
  • Addresses problems head on, taking steps to successfully resolve them with a sense of urgency
  • Creates strategic plans and initiatives to establish a path for growth and greater business success for each location
  • Ensures all fixed assets are in good working condition, oversees preventative maintenance of assets
  • Develops and maintains food quality control, profit and loss controls, inventory levels, and labor and product cost monitoring
  • Accountable for the development of sales budgets and responsible for the successful execution of these budgets
  • Responsible for generating growth and restaurant sales and transactions (guest counts) through local marketing initiatives
  • Ensures that requirements for appropriate sanitation and food safety levels in respective areas are met
  • Oversees the development of short and long term financial and operational plans

REQUIRED EXPERIENCE AND QUALIFICATIONS:

  • 5+ years of experience leading a premium food and beverage operation is required
  • Related University degree or a combination of education & experience
  • An inspiring leader who has proven skills rallying a team to achieve its highest potential and then taking it to the next level
  • Responsible for generating growth and restaurant sales and transactions (guest counts) through strategic initiatives, guest engagement, and community partnerships and local marketing initiatives
  • Motivated by and a passion for engaging with guests to create the ultimate dining experience
  • Strong business acumen with a proven ability to provide insightful industry leading, best in class outcomes to perpetuate growth; driving positive results and aligning with business goals in a premium service environment

  • Comfortable with dealing with media, public speaking, and VIP guests
